These mini-ish apple and oat muffins are so tasty and not too sweet… they could just about pass for a breakfast (serve with extra fruit and greek yoghurt) or a healthy-ish snack! I have used apple juice in this recipe however you can experiment with almond milk or a mix of milk, cream and yoghurt depending on how you feel. At weekends why not be a little decadent and add some double cream or full fat yoghurt.
