Breakfast is served! This is a really simple overnight oats recipe that takes minutes to prepare the evening before. You can adjust the sweetness by adding more or less honey during prep or when you serve in the morning. Or experiment with different toppings for another dimension!
2 handfuls blueberries (fresh or frozen and slightly thawed so mashable)
150ml almond milk or other
Couple of big tbsp Greek yoghurt
100g rolled oats
2tbsp chia seeds
Zest of 1 lemon
Pinch of salt
1 Mash the blueberries with a fork
2 Add the almond milk and yoghurt and mix well
3 Stir in the oats, chia seeds, lemon zest and salt
4 Add the honey and mix again, adding more to get the right sweetness for you
5 Cover and leave in the fridge overnight
6 Top with more blueberries, extra zest or anything else you fancy and enjoy!
